Beef & Cabbage Soup

I like to make this when I want to drop a little weight and jumpstart working out. Since the gym closed due to the virus, I thought maybe I'd just have to wait until the end of the month, but I think it's been pushed to the end of May. ARGH! I've spent the last few days figuring out some stuff I can do at home.

Getting mine started!

Beef & Cabbage Soup

28oz Water

2 tsp Garlic Powder

1-1/2 tsp Greek Seasoning Mix

2 TBSP Beef Base

1lb Ground Beef, lean

1 medium Savoy Cabbage

12oz Mixed Veggies with Asparagus, frozen bag

  1. Turn a big crockpot onto 'high'. Add in your water, garlic powder, Greek seasoning, and beef base.

  2. While your water and seasonings start to heat up, go ahead and brown your ground beef.

  3. While your ground beef is cooking, chop up the savoy cabbage. Add this to the crockpot. Add your frozen mixed veggies to the crockpot.

  4. When your beef is fully cooked, add that to the crockpot. Your crockpot is going to look super full, but as it cooks it will reduce into the soup.

  5. Let it cook in the crockpot on high for 3-4 hours, then you can turn it down to medium or low until you dish it up.

For me, this makes 4 servings. That breaks down to: 235 calories, 25g protein, 6g fat, 18g carbs.
